No-Bake Nut Butter & Oat Energy Balls

Quick, no-bake energy balls with peanut butter, oats, and cacao nibs. A healthy snack that keeps in the fridge for up to a week.

No-Bake Nut Butter & Oat Energy Balls

Ingredients

  • 90g porridge oats (rolled oats)
  • 125g natural peanut butter or almond butter
  • 80ml honey or maple syrup
  • 60g cacao nibs
  • 40g ground almonds
  • 30g desiccated coconut (unsweetened)
  • 1 tsp vanilla extract
  • Pinch of salt

Method

  1. Mix all the ingredients in a large bowl until well combined.
  2. Chill the mixture in the fridge for 30 minutes to make rolling easier.
  3. Roll into 2.5cm balls using your hands.
  4. Store in an airtight container in the fridge for up to one week.

☘ Tip

If the mixture feels a bit dry after mixing, add an extra tablespoon of honey or a splash of milk to help bind everything together.
