Quick, no-bake energy balls with peanut butter, oats, and cacao nibs. A healthy snack that keeps in the fridge for up to a week.
No-Bake Nut Butter & Oat Energy Balls

Ingredients
- 90g porridge oats (rolled oats)
- 125g natural peanut butter or almond butter
- 80ml honey or maple syrup
- 60g cacao nibs
- 40g ground almonds
- 30g desiccated coconut (unsweetened)
- 1 tsp vanilla extract
- Pinch of salt
Method
- Mix all the ingredients in a large bowl until well combined.
- Chill the mixture in the fridge for 30 minutes to make rolling easier.
- Roll into 2.5cm balls using your hands.
- Store in an airtight container in the fridge for up to one week.

If the mixture feels a bit dry after mixing, add an extra tablespoon of honey or a splash of milk to help bind everything together.
